I usually have to boil the white ghost a lot longer than cotton-tails to make them more palitable. Does anyone have any secret recipes there willing to share for snowshoes. The hunting gods have been smiling down on me this winter....I've got a bunch in the freezer:) :) ;)

If you pre-cook Hare in a pressure cooker for about 20 minutes, it becomes very tender. Then proceed with any rabbit recipe - floured and pan fired is excellent.

At the cabin in a cast iron skillet we recently deep fried pieces of hare. Kinda did it just like you were frying fish. Deboned the hare, added a spicy chicken rub to it and let it sit for a little while. It was an experiemnt, but turned out really well for the minimal effort. The backstraps were a little more tender then the legs, but still ate well.
