Ya ever try pan fried mallard in EVOO? All I can say is WOW!

Take some whole peppercorns a handful or so, and crush 'em up with a rollin' pin and roll the duck "breasts" no skin, just take 'em off the bone, in the peppercorns,(you can marinate the duck in some sort of garlicy marinade) Then throw them in the pan with some Extra Virgin Olive Oil, 4.5 minutes a side and let them REST before cutting them, HOLY SHMOKES is that good!
You can serve them with a pile of DIRT, it doesn't matter, those ducks are sooooo good,
Ya know I never really liked duck before I had it like that, the livery taste really got to me, but this tasted like farm raised GRADE A steak.
I always believe you gotta eat what you shoot, I didn't wanna have to give up duck huntin' cause I didn't like the taste!
I hated having to "choke it" down cause I shot, but I wasn,t gonna waste it!
Anyway, try this, its super fast and easy clean up, just 1 pan.


Now, if only those ducks would land first,,,,,,, or if I was a better shot.:rolleyes:

WHB, WOW, farm raised grade A steak! I gotta try some of that. I know what you mean when you say liver taste. I can't stand the taste of liver and duck and geese remind me so much of liver. And yea, it's allways nice to be able to eat what you hunt, I just can't bring myself to put waterfowl in my mouth. It's allways bugged the hell out of me because where I hunt there isn't a lack of birds. Thanks, I'll have to knock a few down next season and give it a try.

Tried your recipe out and it was great... The only variation I made was that I simply used Wok Oil (strong garlic taste) instead of the olive oil. Thanks

That's a Vizsla-- ( Veee-sluh), flydunker. Their starting to get to be a little more popular, nowadays.

Hey, Fieldwalker. That duck was pretty good, huh? Is that wok oil REAL garlicy?? I like that flavor, I actually started injecting some duck breasts with a "garlic marinade" and throwing them on the grill, they taste just as good.

yes, the wok oil was extremely "garlicy" but not too much for my taste... i rather enjoyed the duck which i only cooked to medium/rare.

As far as the dog goes... that's my pup Kayla she's about 9 months now. Growing into a nice little pointer for me. Now all i need is more!!! But I'd have to sell a couple kidneys

IMO, people tend to overcook waterfowl. Cook the meat like you would a steak. You don't have to worry as much about somanilla and such with wild game. So you don't have to cook it all the way through. This best way I've ever had duck breast was pan fried in butter, but not untill the meat was grey (overdone), just until the breast was heated through.
