I was out at Blocks the other day and ran across a good deal on Bosc Pears. I got a 44 lb box of em for $22. I decided I was gonna try canning them, I always remembered going to Grandma's and having good fruit thru the winter months from her canning......so i figured I would give it a go.
The color turned out really good, not sure if they will change the longer they sit, it was the first try at canning fuit. I have canned some tomatoes and salsa before and turned out good. I used some ascorbic acid to help preserve the color...I made up 18 quarts and already gave two away. Had leftover pears that went to a laid off friends house and put the rest in the crisper for eating.
Here are some pics, I got the recipe off the internet, and will post the recipe tomorrow after I have some with breakfast and make sure they are good.

I also got half a bushel of big sweet red peppers too for 4 bucks while I was there, gonna try and do them up either tomorrow or Monday.
Anyone put up Sweet peppers and have a good recipe I can try?
