Didn't see any fish recipes up here so I thought I'd share one of my favorites for Salmon.

Start out with a fresh fillet. Steaks will work too but I prefer to grill mine. Melt some butter and add fresh lemon juice, stirring to make a lemon butter sauce. Cut your fillet to serving size(s). Brush the fillet before and twice during the cooking process. When you have about 3 minutes to go with the broiling, spread about 1 tablespoon of honey over the top of the fillet and continue broiling until finished. You can use the back of the spoon to distribute evenly. The heat makes it very easy to spread. When done the fillet will have a glazed appearance with great taste. Very simple.

A couple of tips to remember is to be careful not to get your fillet too close to the broiler and don't overcook. If you're broiling more than one fillet, try to make sure they're about the same size and thickness. I cover my broiler pan with foil to minimize cleanup. When done you can carefully work your spatula underneath the fillet and separate it from the skin before serving. Believe me guys this one will impress your wife or girlfriend. If done correctly it will be better than any salmon you've been served in a restaurant!

Recurve,

Thanks for the posting, and the reminder that we need to explore other game species. It seems that during this time of the year venison is the main topic of discussion because there is a lot of it in people's freezers.

If you spray your cooking surface with Pam or some other no-stick spray, it will also make clean-up easier. I also have a square of aluminum screen that I use when cooking fish or other small items. By spraying that screen, then laying it over the grill, it allows me to have the meat exposed directly to the heat/smoke that is produced. Then I add some wood chips on top of the lava rocks (also on a piece of screen) to provide a lot of smoke.

The honey glaze is a nice addition - gives the salmon a good flavor and looks really appitizing.

Hey Recurve-

I tried you recipe this weekend and that honey really added a nice touch. My wife even liked it. She usually only sticks to fish stick (My opinion: nasty!!!!). She now wants me to go fishing more this summer.. Thanks!

jbaugher,

Enjoying good tasting food is only one of the benefits from preparing an excellent game or fish meal. Now you get to enjoy the eating and more fishing too.

Who knows? After another excellent meal, she might even go fishing with you.

Enjoy

ESOX, Thanks for the compliment. Coincidentally, my wife and I had it last night too!

Doughboy, I wouldn't try this recipe on trout, but you can always pick up some fresh salmon filets at the store.
