Here's a recipe for all the crock-pot fans - it is simple, and gives excellent results.

For this recipe you will need:

2 lbs ground Vension
2/3 Cup quick oats
1/2 Cup Catsup
2 eggs
1 Pkg dry onion soup mix
Other flavorings of your choice.

Proceedure:

Combine all ingredients in a large mixing bowl - mix well.

Pack mixture into crock pot - compress it into a loaf.

Cover and cook on low 7 to 8 hours.

Top with BBQ ssauce, serve and enjoy.

I have also used this recipe in my smoker by keeping the heat source well away from the cooking pot (a 9" dutch Oven) and baking for two hours uncovered (gives a slightly smoked flavor), and also, works extremely well in a Stone-pit oven for 3 hours (just suggesting options)

This recipe gives excellent results, but also is very basic. If you try it, and use other flavorings, please let me know - always looking to learn new stuff.

We enjoyed the new recipe on Sunday. I substituted brown rice for the quick oats.
We like the idea of it being in a crook pot so that we can take it to a meal and plug it in upon arrival.

I have it in the crock pot now. Haven't tasted it yet, but the house smells great!

A big part of the enjoyment of a well-prepared meal is how it smells. That aroma gets the imagination going.

Thanks for the feedback.

Liver & Onions, did you put the rice in precooked or dry?

Salmonsmoker,
Precooked, but I assume dry would work as long as you put the correct amount of water.

Just finished a meatloaf sandwich. This is the first time I used onion mix or oat meal. The onion mix gave it a nice flavor, and the oat meal gave me nice solid slices. My old meatloaf always fell apart when I wanted to slice off some for a sandwich.
I added some course ground black pepper, 1 large stalk of celery and 1/2 of a medium onion to your recipe.
Thanks, I'll be doing this recipe again!

Had the meatloaf on Saturday. To say the least it was outstanding.

Here's a variation on the cooking process that is also very good.

After mixing the meat-loaf mixture, form it into patties about 3/4 inch thick.

Brown the patties in a hot black-iron skillet only until the surface is crisp.

Place a layer of patties in crock pot set remainder aside.

Heat 3 Tbsp. of butter in skillet until melted.

Stir in 1 cup onion, (finely chopped) and 2/3 cup chopped (celery) and cook until onion is tender (about 3 minutes.)

Stir in 12 cups of soft bread cubes, 1 cup water, 1 tsp dried sage, and toss. Spread a layer of the bread mixture onto patties.

Heat 2 cans (11 oz) can of condensed cheddar cheese soup until hot, then pour about 1/3 to 1/2 of it over bread mixture.

Add another layer of meatloaf patties, another layer of the bread mixture, and another layer of cheese. Continue till all patties are in the crock pot and covered with the bread mix and cheese.

Cover crock pot, turn it on and let it cook as the previous version of the recipe calls for.

We found this to be a fun variation on the basic meatloaf recipe. Try it and let me know how it works out.

I made some this past weekend. It was good but the meat fell apart. I used Quaker Oats but I don't think it was Quaker Quick Oats. Should it make a difference? I did add some onions and green peppers and it was tasty. BBQ sauce helped in the flavor.

henryboy32,

It has been my experience, (and from the postings above) that this recipe holds together exceptionally well. The only difference is your addition of onions and peppers (good idea for adding flavor.) Try it again but finely chop the onions & peppers to see if that makes a difference.

Either kind of oats will work. So will rice (as Liver & Onions posted above) - even wheat germ or bran will work to hold the meatloaf together.

Keep us posted on your results.
