Did you ever serve a pecan cheese ball at a party and find it still there when the party is over. Here's one that will be long-gone before your party guests even think about going.
(This recipe was in a book. It called for a 6 oz can of salmon meat and liquid smoke to taste.......Not my style. Last week I made some smoked-cooked salmon for dinner and added an additional 1/2 lb piece for this experiment.)
For this recipe you will need:
1/2 lb smoke-cooked salmon
1 eight oz package cream cheese
1 Cup pecan pieces.
Procedures:
Smoke-cook salmon on grill or in smoker until meat flakes easily - break meat into small pieces.
Soften cream cheese (10 to 15 seconds in the micro works well)
Mix salmon and cream cheese thoroughly.
Place pecan pieces on a large square of aluminum foil.
Pour cream cheese/salmon mixture onto pecan pieces and roll around until evenly coated.
Fold foil around the cheese ball and refrigerate several hours.
Remove foil and serve with sanck crackers.
Personally, I hate to experiment with my smoked salmon.....I mean, when something is really good, why take a chance on ruining it with an experiment. However, it is my nature to experiment. In this case, it was well worth it. This is an excellent smoked salmon party snack - would also go well with the Superbowl.
