Hey FF
That is the Chicken of the woods aka Laetiporous Sulphureus
a little info on them, read the edibility part too.

I generally just use them fresh although I know some
that have good luck just freezing them.
Usually just the most tender outer portions of those
are good to eat.

Chicken of the woods is also called sulfur shelf. Hen of the woods is a completely different mushroom.
The chicken freezes well after partially saute'ing, so does the hen. The hen also dries quite well.
Both can supposedly be frozen raw, but I've never tried that.
Nice chicken!

im a newbie to shrooming. I really dont hunt for them, but do run across some during the fishing seasons, these are in my area where i live , i did saute a piece after washing(should i soak these in salt water before eating?),a i was a bit leary at first but,, it does taste like chicken,a bit earthy but deffintly chicken.jus tested a small piece though to see if i get any allergic reaction from it .

Hey FF
Sounds like your doing it the right way
and chickens are one of my favorites.
Salt water is not necessary imo, just rinse and slice.
Once inawhile they will be buggy, just look for
worm tunnels as you slice them up, but usually not
a problem this time of year.
