I found a delicious recipe for preparing goose breasts.
(4) goose breasts
(1) medium yellow onion chopped
(2) tsp Italian seasoning (I used Little Caesar's brand)
(3/4) C soy sauce
(1 1/2) C red wine (I used homemade Elderberry wine)
Marinate for 14 - 16 hours.
Preheat the grille with apple wood, and place on grille when wood smoke starts.
I didn't time the grille, but went by internal temperature. Turned at 105*F and removed at 173*F. The grille is a Holland grille.
Even my mom liked it! :)
