Here's an interesting variation or combination of a Vension burger and a pancake. When served with a salad, it makes an excellent lunchen meal.

For this recipe you will need:

1 lb ground Venison
2 Cups uncooked brown rice
6 eggs
2 Cups shredded smoked Swiss Cheese
1/2 Cup Sautaed chopped mushrooms
1/2 tsp garlic powder
1/2 tsp seasoned salt.

Procedures:

Fry out the ground Venison and set aside.

Saute(sp?) mushrooms and set aside.

Cook Rice as per directions on package.

Heat a lightly greased griddle or large skillet over a medium to high heat.

While this is heating, put all ingredients into a large bowl and mix thoroughly.

(A note on the Swiss Cheese, smoked Swiss is easy to make in a small electric smoker, and adds an excellent flavor to many recipe's. If you do not have access to such, you can add a 1/4 tsb of liquid smoke. It won't be quite the same, but still it makes a good flavor addition.)

Drop the mixture by 1/2 cup cupfuls onto the hot griddle. (Be sure to keep the griddle hot so that the cakes cook before the cheese melts and runs.)

Cook until the edges begin to brown, about 3 minutes. Turn and cook an additional 2 minutes.

Makes about 16 cakes. If you have leftovers, they can be reheated in the micro.

We made these Venison rice cakes for dinner around the campfire last night.....an excellent variation on burgers.
