I have a TON of venison sausage... any good recipies?

Hope,
By Venison Sausage I assume that you mean the rolls of summer sausage that one can have made. If that is the case:
I prefer to get rid of some of the added fat in that kind of meat so I generally make thin slices and fry them out first then:
I have used them at parties by laying them out with a slice of swiss cheese on crackers.
Also, cut them into chunks and mixed into an omlet. They also make a nice flavor addition to a fried egg sandwich.
If they are fried out to a cripsy state, they can then be crumbled and used anywhere that you would use bacon bits (they make an excellent salad topping.)
Experiment. You will probably find many ways to use them.

thanks ss... you are correct. the butcher made a mistake and make summer sausage out of my husbands ENTIRE deer practically - boy, my husband was ticked! Now we have SO much summer sausage!

Might be time to find a new butcher.
As you experiment with uses for Summer Sausage, keep us posted. Maybe you will come up with some new ideas for the rest of us.
I will look through some books that I have to see if there are any other ideas to pass along. (Most of what I post is stuff that I use on a regular basis....don't have much Summer Sausage to experiment with.)

There isn't any better snack during a football game than a good ol' venison summer sausage. I get at least 5 or 6 sticks made up every year and they don't last but a couple months!!

Sliced thin and served on Rye crackers with Swiss cheese: excellent snack for football games or holiday parties.
Do you have nay other uses for or recipe's that include Venison Summer Sausage?

The other day I used summer sausage in an omelete...
...diced the meat and sauted it with some diced onjions and a touch of olive oil (salt and pepper to taste)...removed them from the heat once the onjions started to become translucent...then added eggs (omelete style) to the pan. Once the egg was cooked through, I added the meat and onjions to one half of the eggs, and american cheese to the other half. Wait until the cheese is melted...then filp your omelete. Yum, yum, come and get some!!!

Sounds like a great way to start off the day.
I have also used fresh Vension Breakfast Sausage in omlets with excellent results.
