Any of you who frequent the Irons/Dublin area just north of Baldwin probably already know that the Dublin General store is famous for their jerky.
The recipe is a highly gaurded secret, and I spent years trying to duplicate it.
After MUCH trial and error, I came up with a recipe that I have been asked to copy off at least 100 times. It's not Dublin jerky, but I've been told that it was the next best thing. My wife and kids gave the name after so many people asked for the recipe (just so you don't think that I'm too full of myself).
I put it in the recipe section of this forum. It's under Misc.
I figured with all of the deer being processed, some of you might want to check this out. I hope you enjoy it.

I hunt the area and have been to the Dublin store many times. If you're in the area you really need to visit. Now I moving this topic to the correct forum :)

Hey Rooster, If you go to this forum's recipe section, you need to find the misc. section. It's labeled "Tom's famous jerky recipe".
If you still can't get it, let me know, and I'll send it to you
You wouldn't by chance have a recipe for the cherry beef jerky? That's my hands down favorite.

The recipe looks like a good one.....will have to give it a try. My usual method of making jerkey is with ground venison, but this looks like a good way also.

I you go to Gordon's Food Service and purchase a gallon of Cherry Snow Cone Syrup, then add that to the brine you will probably be able to get the desired flavor after a couple of experimental batches.
I will experiment with that also.

Two or three years ago, I saw that stuff (a gallon is only $4.?? and it is very concentrated - if diluted to juice it makes 6 gallons) so I bought one....added 5 gal of water, some sugar and yeast and made a large batch of cherry wine. It turned out OK, but certainly fresh cherries work better, (they were not in season at the time.)
Since, I have used it in severqal recipe's where I wanted a very concentrated cherry flavor. Until I saw your idea about cherry jerky, It had never occurred to me to use it for that purpose. Now I am wondering about Cherry-burgers - add some of that concentrate and a few chunks of dried cherries and....who knows. Will have to experiment.

The stuff they make in Dublin is killer. The cherry beef, and honey musturd turkey, are two of my favorites. On any given weekend, you can walk into their store and people will be lined up waiting to buy some.

The Family Fare store by us now stocks Dublin jerky in the meat case and sell it by the pound, and yes they have the Cherry Beef!

Last time we were up there we asked what the difference between the hot and hell fire jerky was and the guy said about six beers. They due make great jerky.

We make it a point to visit the Dublin store every time we are in camp, a couple years ago I went to purchase some jerky and fell in love with a new Remington 20 ga. LT, they don't just sell jerky at the Dublin store.
