I made this today in my large crock pot. Turned out real good. Here is what I put in the stew.

. Caribou meat (any game/beef will do) cut up to bite size pieces. What ever quantity you want. I had about 2 lbs here.

. 2 Onions cubed.

Fry the onions and meat until browned. I sprayed the pan with "Pam".

In the crock pot....

. 6 cups of liquid, mine consisted of one can of chicken broth, broth from a can of green beans, topped off with water.

. 1 box of wild rice.

. 1 cup of pearl barley.

. 1 can of green beans, cut them in half. Corn would also be good but I did not have any in the cupboard.

. 1 package of mushrooms, dice 'em.

. a handful of cherry tomatos, cut in half.

Add seasonings to taste. I personally like a lot of garlic and black pepper. I also added homegrown sage. I was out of Bay leaves but they would have been good here. I salt after, never while cooking.

When the meat/onions are cooked add them to the crock pot and cook this concoction on high for several hours. Add water as needed. Stir it every now and then too.

Wow. Delicious.

Sounds delicious. Will give it a try and let you know how it turns out.

From your description, the rice and barley go in dry, correct?

Also, why do you not add salt during the cooking process?

I do not salt steaks and roasts prior or during cooking because it draws the juices out of the meat. Never thought about it having a similar effect on stew ingredients.

Hi SS,

I add the rice and barley dry. Follow the package instructions for water. I don't salt because I don't want to add too much. I personally don't like a lot of salt.
