I was first introduced to this "Autumn Special" at a potluck dinner. It was made with ground beef. After talking to the one who brought the item, I went home and experimented. Here's the results.
For this recipe you will need:
1 lb. ground venison
2 Acorn squash
6 slices of bacon fried cripsly and crumbled
1/4 Cup onion, diced
1/2 tsp salt
2 Tbsp brown sugar
1/4 Cup dried bread crumbs
1 Tbsp. butter
Proceedure:
Microwave whole squash on high for 10 to `12 minutes - then let stand for 5 minutes.
While that is going on, fry out (skillet on the stove) the ground venison, onion and bacon bits. Set aside to drain.
Cut squash lengthwise and discard seeds and fibers.
Scoup out the squash from the skin and set the skins aside.
In a small bowl, mix squash with salt and brown sugar. Whip till fluffy.
Combine venison mixture with squash and mix thoroughly, then spoon into squash skins.
Microwave the stuffed squash skins for 3 minutes on medium.
In a small bowl, mix bread crumbs and butter, then heat (same skillet used to brown the meat) until the butter is melted. Then mix thoroughly.
Take stuffed squash skins from the micro and top with the bread-crumbs & butter mixture.
Serves 4 people an excellent autumn meal.
