For a party or family gathering, it may take several hours to cook a roast or other party-size main dish. Here's a recipe for an appetizer that will keep everybody happy until the main dish is ready.

For this recipe you will need:

1 pound or more of venison (sirloin, rump or shoulder all work well) cut across the grain, into 1/2 inch wide by 3 inch long strips.

Marinade:
1/4 cup red wine
1/4 cup soy sauce
2 Tbs sp Olive Oil.

Put steak strips in a heavy-duty plastic bag.

Mix wine, soy sauce, and olive oil and pour into bag with steak strips. Close bag and mix well to insure that all meat is covered. Refrigerate for 1 to 2 hours.

Drain marinade. Weave strips onto skewers.

Cook for 3 to 4 minutes on a hot grill or coals, turning once (adding damp wood chips or sawdust to the coals gives a very nice smoked flavor.)

Serve hot.

The only problem that I have had with these very tasty appetizers is that some times we never get to the main course.

Enjoy

heres another quick appetizer.

2-4 lbs venison cut into strips like french fries
1 tsp pepper
1tsp onion powder
1 tsp garlic powder
1/4 cup worcestershire
1tsp liquid smoke
1/4 cup soy sauce
1/4 flour

mix all ingredients except flour and meat. add flour and mix till you have a batter not to thick. dip meat into batter and deep fry for 30-45 seconds or until brown and serve warm.

makes a great camp or game day appetizer.
