For the Pepper-Steak fans out there, here's a recipe that is quick an delicious.

To make this dish you will need the following:

1.5 lbs Venison round steak, cut into strips.
1/4 Cup tomato juice
1 bell pepper, cut into strips
1 red bell pepper, cut into strips
1 medium onion, sliced
2 tsp cornstarch
2 Tbl soy sauce

Proceedure:

Preheat browning dish on high for 7 minutes. Brown venison strips on both sides (or use a black iron skillet - even works over a camp stove or on a patio grill.) Then drain.

Combine steak, tomato juice (one time I tried boullion - it worked but tomato juice gives a better flavor), peppers, and onion in a 2-quart casserole dish (also can be done in a Dutch Oven over the camp fire.)

Mix cornstarch into the soy sauce, when this is an even consistancy, add it to the meat mixture.

Cover tightly and Micro on high 8 minutes (or, if using a Dutch Oven, simmer for 20 minutes.)

Let stand an additional 5 minutes before serving.

Serve on a bed of rice or noodles.

This one is easy for deer camp, a dorm room, or for making on your kitchen stove.

Enjoy.
