View Full Version : Stuffed Baked Trout in the Micro

For the outdoors person who is either limited to a microwave for cooking, or who wants to cook something in a short time, here's a rceipe for Trout. My wife used it a couple years ago when we got a Brown (3.5 lbs). Since it was early in the day when the fish was caught, and going to be a while before we would be back home, we field dressed (gutted and degilled) the fish. When we got home, we washed it, submerged it in water, and put in the frige. The next day we had avery taste- filled dinner.

Beside the fish, you will need the following:

1 Tbl Seasoning Salt
2 Tbl melted butter

For the stuffing:

1 Cup mushrooms, chopped
1/2 medium onion, chopped
2 stalks celery, chopped
1/2 C butter, melted
1/4 C fresh Celentro (parsley will work), chopped
2 slices fresh bread, crumbled.

Melt the butter and mix the seasoning salt into it. Then brush this mixture inside and outside the fish. Place the fish in a Microproof dish with cover (just large enough to hold fish.) Set aside while making the dressing.

For dressing, Saute' the mushrooms, onion and celery in the butter for 2 minutes on high setting in Micro. Combine remaining incredients, mix well, and stuff fish.

Cover fish with a tight fitting lid (we use a layer of plastic wrap under the regular lid) and Micro/bake on high for 4 minutes. Turn fish over and bake an additional 4 minutes.

Let stand for an additional 4 to 5 minutes to complete cooking (check fish for donness).

Both the fish and the dressing turned out excellent.
