Recently, 7MM asked about some game recipe's for the Micro. Since Rabbit season is on, here's one that is good - also quick and easy.
For this recipe you will need:
2 rabbits quartered
1 Cup vinegar
1 Cup water
1 tsp Seasoning Salt
1/2 Cup sugar
2 stalks of celery sliced
2 carrots sliced
1 onion sliced
2 Tbl flour
1/2 Cup sour Cream
Combine the vinegar, water, seasoning salt and sugar in a flat dish larg enough to hold the rabbit and marinade. Add rabbit pieces, stirring well. Place in frig for 48 hours, turning every 6 hours.
Add celery, carrots, and onions to the mixture, cover with plastic wrap, and Micro-cook on high for 7 minutes, then set Micro on simmer and cook for another 20 minutes.
Remove the rabbit from the mixture and keep it warm.
Pour the rest of the stuff in a blender and process until smooth. Stir in the flour and sour cream. Micro on high for 2 minutes or until thickened into a gravy.
Arrange rabbit on plates, and cover with gravy. Serve with a baked potato (also done in the micro) and enjoy. It is good.
