Okay, now that I'm thinking about all of this food I thought that I'd share a recipe that I use for fish (mainly Salmon and Steelhead) on the grill. It's real quick and real easy and removes any and all fishy taste if done right.
All you need to do is melt down 3/4 stick of real butter per fillet (based on 8-10 lb. fish). Simply add salt, pepper, garlic salt, onion pepper (optional), and Lawry's seasoning salt (amount of each spice will vary according to your taste, my personal preference is about a pinch of each).
Baste the fish completely and grill on tin foil. Rebaste every time you flip the fish over or about every 3-4 minutes. Cook until the fish falls apart and serve. Total preparation time is about 25-30 minutes. Serve and enjoy fresh off of the grill.

Sounds like a good way to fix salmon. However, before I can try it, I got to go catch some. Went out Sunday on the Joe and the wind was extreme. Only saw two fish taken all day - and had one good hit on a spoon.
As soon as I have a new supply, will give it a try and let you know how it turns out.

Hmmmm I kind of have the same idea but with Trout After I clean the fish I through it in a zip lock back with milk in it let it sit in the frig. for couple hours this gets rid of any fish taste (also this works good if your going to frezze it just frezze it in the milk it will stay fresh for ever)Hmmmmm now back to cookin then I through it in the tin foil put the lemon pepper Lawrays season salt now here comes the goodies i chop up some onions and some good bell pepper then rap it up through it on the grill Hmmmmmmm now thats good

I have never used the milk proceedure that you describe. A few weeks ago, there was a question posted here about using milk in preparing salmon for cooking, and I could not find any reference to it for Salmon or Trout (and I looked in places where most people don't look.) It seems to be a well-kept secret.
PLEASE - let us know about this. How is it used? How effective is it?
Salmon fishing is really getting hot here. How's the it going in Az?
By-the-way, Michigan is a long ways from Tuscon. How did you hear about us? For sure, pass along a good word to your fellow hunting buddies in Az, about us. We would like to hear from them too.
If you have any "western" recipe's - let us know. We are open to learning from anyone who knows something about cooking wild game.
