Steve,
Last week (update, actually it was earlier this week) you asked about marinades. We had some postings about using them on steaks, but not about marinades themselves.
Here is a marinade that I use occassionally on a venison round roast.
BEER Marinade
In a blender, combine the following
1 can (12 ounces) of your favorite brew
1/2 C Olive Oil
1 med onion, chopped
2 cloves of garlic, crushed
2 tsp powdered mustard
1/4 tsp salt
1/4 tsp black pepper
Place roast in a plastic container and pour marinade over it, then cover and refrigerate for 24 hours (turning every 6 hours).
This works best when meat is not more than 3 inches thick.
This weekend I will try a vinegar based marinade and let you know how it works.
