I got a nice little king this morning and I am going to cook him up tonight. But I want to try something different on the grill. Does anybody have any suggestions. Big Al

Big Al,
Here's an easy recipe for Salmon that gives it a totally unique and wonderful flavor.
Hickory Smoked Brandied Salmon on the grill.
Start by putting some Shagbark Hickory Bark in water to soak at least 2 hours prior to the next step. (While you are at it, put some roasting ears in water to soak at the same time (lave the husk on).
In a small mixing bowl, combine the following:
1/2 Cup Brandy
1/3 Cup melted butter
2 Tbl Sp lemon juice
1/4 cup snipped green onions
1/8 tsp seasoning salt
1/8 tsp pepper.
Set aside 1/4 cup of the above mixture, then cover the rest and put in the frig to chill.
When the above mixture is cooled, arrange filets in a single layer in a baking dish just large enough to contain them. and pour the chilled mixture over the steaks, turning to coat (the butter will have congealed so you will need to spread it around).
Cover the steaks with plastic wrap, and chill in the frig for 1 hour.
Turn the filets over and chill for another hour.
Spray your cooking grate with Pam or some other no-stick spray, and get the fire going (you will need a medium fire for this one.)
Cover the coals or lava rocks with the soaked Hickory bark and then wait until it is smoking profusely.
Drain and discard the marinade from the filets.
Arrange the filets on the prepard grate and cook for 2.5 minutes with the lid closed. Fill in the rest of the grill with the roasting ears.
Baste the filets with the reserved marinade and cook another 2.5 minutes.
Turn Filets and baste again.
Cook for 2.5 minutes with lid down.
Baste and cook another 2.5 minutes or until the meat is firm and opaque and just begins to flake.
Serve with the smoked ears of corn and a green salad. Wonderful grilled dinner out.

Thanks Salmonsmoker, I'm not going to have time to do all of that tonight, I work a split shift and don't get out until 9:00. But, I will keep that recipe in mind and I just might try it out this weekend when I have more time. I guess tonight I'll just have to do it the old fashioned way with my quickie melted butter recipe. Thanks again and when I get a chance I'll let you know how it turned out. Big Al

this is a little late...lol...but still worth it. i just use butter, lemon pepper, and Lawry's seasoning salt.

My favorite quick salmon marinade:
fillet fresh salmon, skin, reomove mud line, remove bones and cut into small steaks.
Marinade 2 hours in zip lok bag with italian salad dressing, rosemary, and fresh chopped garlic.
Grill on med/high turning once. Mmmmm

I've tried Tim's (STEINFISHSKI) quick and easy suggestion and I love it. Per Tim's suggestion I flip the steak/chunk when the edges are just turning black and it works perfect.
I've tried a lot of the fancier recipes and they're great but for the time required and the taste you get this is best I've found.

I like to use Chrf Paul Prudhomme's Seafood Magic. Put the fillet on a piece of heavy duty foil and then sprinkle liberally with the seasoning. Cook the fillet on high heat for about ten minutes or so, maybe longer if its a thick fillet. Don't overcook it! If you like to blacken the Blackened Redfish Magic works wonders.
Its even better if you use pliers to get the pin bones out before you cook it.

I get the seasoning on-line most of the time. The web address is chefpaul.com. I find them at the grocery store sometimes but not often. If you go to the website just hit the shop online option and you will see the different varieties you can order. Its actually better than going to the store.

Your right Ladykiller butter, lemon pepper, and Lawry's seasoning salt is good. Tastes great with lake trout also

We use that same combination (butter, lemon pepper, and seasoning salt (my own recipe rather than Lowerys) with the addition of about 2 TBSP of lemon juice when frying Salmon in a black iron skillet. Excellent.

I take the fillets and wrap them in reynolds foil, then rub butter all over the fillets, cut up some large sweet onions lay them on the fish. Sprinkle onion&garlic powder on the fish then add lemon pepper, cook on the grill until they are flakey, then open the foil and add some fresh green apple sticks to your lava rocks until it smokes, close the grill cover and let the smoke add to the taste, open a cold one and enjoy!:D

Hi,
I cooked a SteelHead last week in foil and I just covered it in Miracle Whip and it was pretty good.I am going to try it again and add some other things to it , garlic salt and lemon.Boy I get hungry thinking off fish on the grill.

A recipe that I like with fish for the grill is simple and does not hide the taste of the fish. I do use a fish rack to keep the fish in one piece.
1 cup of soy sauce
fresh spicey peppers to taste (I use cayan peppers when I can but now I using some dried peppers I picked up in Fort Worth)
Smashed garlic to taste
Mix all the stuff together and let it set for at least 4 hours
Make diagonal slices in the fish like \ with the head pointing >
Just before you put the fish over the coals or fire drizzle the sauce over the fish
Most of the sauce rolls off the fish but there will be some good flavor added.

super easy recipe for salmon and trout. works on grill or in the oven. lay out foil large enough to wrap your fish in. spray or rub the fish with olive oil or butter (make sure to oil the skin side well or it may stick), lay fillets skin side down. slice a whole lemon into thin slices, arrange them on the fillets, add fresh basil or rosemary(whatever you like better), then add some chopped garlic. add a couple shots of white wine (if you have it). wrap it up good and toss it on the grill for about 10 minutes. unwrap carefully (will be steamy)and serve. make sure the grill is clean or the foil will stick. hope you enjoy.:)
