Since I am somewhat new to salmon, steelhead fishing, I have a question. What is the difference in the taste of a Salmon that is caught in one of the Great Lakes vs. being caught on the river. One of my co-workers only fishes in Lake Michigan on a boat and claims that the meat is all pink and is much better than the river fish. The stuff I get out of the rivers(Black-Port Huron, Betsie) is pretty white. What is the difference? Is it taste, texture, flavor, etc.?

u will fined out that there is some disagrement on the taste of river/lakes kings. As a rule, lake kings are better then river kings. River kings can taste good, but watch how dark a king u take. Anything too black isn't gonna taste very good. If u can, try and get more peir fish, if u don't have a boat. The peir/breakwll fish are still fresh and will taste better. River kings will taste best when smoked, while peir/breakwall kings can be perpared by baking, frying, or whatever means u like withour developing a foul taste.
