By now, some of you have a deer. Best advice for quality meat - given these temperatures - get it to a processor as soon as possible.
I passed on a large doe early Sun. AM. She was only 20 yds away but 3 rows back in standing corn. For me, not a sure shot.
However, whenever anyone in our camp gets a deer, our traditional meal that night is stir-fried loin (the two small strips of meat on the inside rear of the body cavity). If not removed immediately, they dry out and are are mostly wasted because they are too small to trim away the dried crust.
Here's how we fix them.
Using a short filet knife, remove the strips. Cut them into "tasty morsel" size (about half a bite). Then, sprinkle them with garlic powder and let them set for a few minutes while the skillet gets hot.
Put a quarter cup of olive oil in the skillet. Once it is nearly smoking hot, put the meat in for just a few minutes (almost like a hot-oil fondu only it is done in an iron pot.)
This is a delicious appitiser for a deer-camp meal and fantastic motivator for the rest of the hunting party.
