Check in the Fish Recipie Forum. I brought forward one titled "Hors D'ourves made from pan fish. Itr works well with bass also and no muddy flavor.
In the early part of the season, I smoke them too.

I soak them in milk over night then deep fry them like gills or perch. It's the only way I've ever been able to make them come out good.

A friend of mine cuts them in chunks and then boils them. Then dip the pieces in butter. It's supposed to taste like lobster(never tried it myself!);)

SS, I'd say yes since he fishes all summer and keeps the occasional bass. I've heard this simple method referred to as "Poor man's lobster." I believe he also soaks it in milk overnight to help tame any muddy flavor.
Now, a question for you...... I caught some Crappie this summer and coated them with Progresso bread crumbs and fried them in oil, along with some bluegills. I found the crappie to be very mushy and didn't care too much for them. I hope to catch a few ice fishing and wonder if the cold water helps improve the texture? Thanks.

When I was a kid and eating bass I would fillet the big fillets again to make it a thinner peice of meat. Less fishy taste that way. Then I would soak in salt water actually for a half hour. Then dip in egg white then dry drakes mix. Have half veg oil half butter Hot before you throw it in till golden. The faster the better without burning. Id eat them out of cold deep waters, as the basss out of rivers dont taste good to me. This works great for crappie. If you want some more flavor add some paprika and salt. Or some Old Bay and salt. good stuff

Any cold water fish will be firmer than the same species cought in warmer water. Crappies are best in the winter, or the spring before the lilly pads are above the water. After that, I use them for pickled fish with sour cream. No one objects to them when fixed in that manner.

A friend told me last year that smallies taste alot better than largemouth. I kept one and boiled it as suggested above in chunks with salted butter. VERY good. Much tastier than largemouth and almost (not quite) comparable to cod. When i was a kid my mom would make fish stew a few times a year with largies but you couldn't really taste it due to the seasonings.

It has been my experience, and this thread bears it out, that with fish, no one recipe or cooking technique works for all species - and also, most all kinds of fish can be a very tasty meal if prepared in a way that works with the inherent flavor of the species.

If you want good Bass get them out of clean water!
My Dad has a place on Clear lake , it's just north of Atlanta MI.
This is a small spring fed lake and it is incredibly clear.
On a calm overcast morning at the first dropp-off you can see strait down 35 feet,it's like looking through a window,at the second drop-off it just goes into blackness!
Anyway there is big smallmouth in this lake and on a calm morning you can see schools of 4 and 5 pound fish cruising in about 30 feet of water, by schools I mean 6 to 10 fish..
But in that clear water they are almost impossible to catch!
Most of the big bass are caught in the deep water by people fishing for Trout, they hit the 12 to 14 inch trout when people are pulling them up, I have seen a 8lb+ smallmouth caught by my dads neighbor
Anyway if you get one of these fish they are like eating 4 or 5 pound perch, just unbelievable!!!!
I can,t believe people fish for those mushy trout!
