View Full Version : Your best "camp" chili recipe

Here's ours: DILLIGAF Hunt Club "Dutch Oven" Chili (we don't make it in a Dutch Oven, but if you have ever slept in a sleeping bag after having a big bowl, the name will soon be all too clear!)
3lb. Venison (we don't add pork, but it does add flavor)
Three Vadalia onions chopped
Three - 14oz cans of chopped stewed Tomatos
One - 15.5oz. can each of (Bush's "Chili Magic" flavors; Louisiana, Texas, Original and one can of Bush's Maple Cured Bacon baked beans)
Two packs of McCormick (Hot) Chili powder
Two beers (Brand optional)
Brown venison and drain any fat or liquid.
Saute onions until clear.
Add everything (beer last) into a large pot and let simmer for a few hours (or as long as you can stand smelling it without tasting it)
It gets better with every serving! Enjoy!

Sounds like a great recipe. However, it seems like you're a little light on the beer. Porbably would need 6 beers - two for the recipe, two for drinking while cooking the chili, and 2 for drinking after eating it.
I have not made chile for a while, but your recipe got me thinking about it. Will let you know how it turns out.

Yeah Salmonsmoker,
6, 12 or even 18 more beers can make for a good time in the kitchen. I just made half a batch on Sunday and I will probably polish it off tomorrow. It's a good recipe and very quick to make. If I'm not at camp, I usually make some at home for the Lion's games.

Here's a Chili recipe, a variation on what you have. (I prefer a very thick Chili so the liquid is limited. It can be adjusted to individual taste.)
Get a medium size Dutch Oven and get it hot.
Put in:
3 Tbl spoons of olive oil
3 Tbl spoons of Jalapinio (SP?) vinegar
2 lbs venison ground round (fresh is best.)
Brown the meat thoroughly,
While that is cooking, and in a separate pan, cook a chopped onion. Usually, I cook the onion until it is browned (or carmalized) for more flavor.
When the meat and onion are done, combine them and add:
1 Qt stewed Tomatoes
1 large can of red kidney beans (I drain the bean juice off - it adds a starchy flavor to the chili)
2 Tbl spoons of Chili powder
3 Tbl spoons Sugar (just enough to blend the flavors - not to make sweet chili)
1 Tbl Spoon seasoning salt.
Simmer for 20 minutes and serve.
Quick to make and good to eat: Good deercamp food.

I'll try it! Carmalizing the onions is a good idea. There is nothing wrong with a slight sweet taste in chili. Especially if it is REALLY hot.

I have made chili many times and I dont think that I have done it the same two times. I like adding spice and flavor so I use all sorts of spices and hot peppers. I have 6 kinds of peppers growing behind the house.... Anyway, try adding something "unusual" like BBQ sauce, honey, steak sauce, jalapeno liquid, bacon pieces, whatever. You dont need to put a ton in so if its not that good, you can still use it for chili omlettes or whatever.
