Okay, this is for all the squirel lovers out there. This is one of my favorite ways to eat squirel!
First I clean my squirels by cutting around the center and then pulling the skin back away from the center towards each end. the skin will roll backwards over the feet, head, and tail. I then cut off the head, feet and tail, and dispose of the skin with the head feet and tail together. I then cut out the belly section, (carefully) and remove the inards. Don't forget the chest cavity. Rinse compleatly with cold water.
To prepare squirel I like to boil it. I've found that once boiled I can use it for many differant recipes. I will boil a squirel aproximately 15 to 20 minutes. Then I allow it to cool enough to tear the meat from the bones. Set the meat to the side and prepare the following.
Using 1/4 cup butter
1/3 cup flour
2 cups milk
melt butter in sauce pan, use medium heat and be carefull as butter burns easy. slowly stir in flour and then add milk all at once. Continue to heat on low stiring the whole time till it gets thick and bubbly. Add meat from squirel, and either, one and a half cups mixed veggies frozen, or one can of the same. Fresh veggies works good too but remember you will have to cook mixture longer for fresh veg. While mixture is heating back up, I add salt and pepper to taste. Also just a little dash of garlic powder. Continue to heat on low until it begins to get hot and bubbly again. Then remove and pour into a caseroul dish. I have used a small cake pan, but I prefer the caseruol dish.
Next using 1 cup bisquik mix
1/2 cup milk
1 egg
mix ingredients in a bowl till it forms a nice dough, if feels a bit runny add a little more bisquik, if it feels a bit dry and crumbly add more milk. Should form a nice dough ball. gently knead it and roll it out on wax papper about 1/2" thick. Note coating the wax papper with a bit of dry bisquik will help keep the dough from sticking. Now cut out to shape of top of caseroul and lay over top. At this point you need to have your oven preheated to 400 degress. Bake uncovered for aproximately 30 min or until the top is nice and golden brown. You can poke a tooth pick into the crust and if it comes out clean, its done.
