This is far from your ordinary, run of the mill ways to cook venison. Actually - its a stew, but the flavors of the ingredents combine to transform it into sheer eating pleasure.
The following ingredients are needed:
1 lb well trimed venison cut into 1-inch cubes.
3/4 cup finely chopped Onion
1/2 Tbls minced garlic
1/2 cup tomato puree (from the store)
1/4 tsp oregano
2 T Olive oil
2 T Onion Vinegar (recipy is in the Other forum)
3/4 cup red wine
1 1/2 cups cubed potatoes
1/2 cup sliced carrots.
Put oil in dutch oven and heat. Then brown the meat. Add all other ingredients and bring quickly to a boil over the campfire (or stove top) Then bury in your pit oven for 3 hours (or bake in a more conventional oven at 375 degrees for 1 and a half hours. This recipe serves 4 people a wonderful blend of flavors.
