View Full Version : BBQ veggie idea's?

I want to add more veggies to the BBQ buffet for my kids and guests. Having enough meat never is a problem. :)

I already do some of the standards like eggplant, zucchini and peppers with some olive oil and basic spices on them. I also marinate asparagus in light olive oil and old bay and that's great too.

But does anyone have any other good BBQ'd veggie recipes that are a bit more unusual that came out good?

You may have seen this before but this is the appetizer that I put out at most all my Q's. Plus, it has all the major food groups: veggies, dairy, meat, etc.

Why would you consider these an appitizer? Add a thirty pack of ice cold PBR's and it look's like they'd make for a great main course dish to me! :whistle: :yikes: :woohoo1:

Wrap those asparagus in bacon, then grill 'em...;)

I do a lot of potatoes on the grill. 1/4" slices, 1/4" slices of onion as well. A little EVOO, salt and pepper. Grill 'em up, toss 'em in a bowl with some fresh rosemary and garlic...:D

I don't think the cardiologist will object. Most seek out the proctologist after consuming too many of these bad boys. I, for one, always limit myself to one or two, even though I may make several dozen at a time. :lol:

Take a large Onion, cut the top off and peel down to the root end. Core a small protion out of the top and cut down into the onion (not all the way through) in about 8th's. Now place a cube of Beef Boullion or acouple of teaspoons of the Beef soup base in the cored hole, then generously butter the top of the onion. Now wrap with H/D Aluminum Foil and palce on grill in low to medium heat. When you open the foil do it in a small bowl to save the juice. The onion and juice taste like French Onion soup and can be eaten straight up or used to garnish other foods like Burgers or Steaks.

I also do roasted potatos and onions in foil on the grill. I use H/D foil again. I spray the foil first with non-stick spray and pile on sliced or wedged potatos and onions, drissel olive oil on top, salt, pepper, and seaoned salt on top. Now I fold the top down and the ends tightly to make a envelope. This goes on the grill on low heat for about 30 minutes and then I flip it over for about 10 mintues (the flipping over is the reason for sealing the foil tightly). Now as I start the meat, I leave the envelope at the coolest part of the grill. As the potatos finish coking the envelope will inflate with steam. Their done. I have done the same procedure with a mix of Zuccini and summer squash, onions, Broccolli, and fresh green beans.:corkysm55 Enjoy. FRANK

take any vegetable imaginable (my favorites are portabellas, red onions and carrots) toss them in Olive Oil, grill them so they are charred just a bit. Then toss them in Balsamic vinegar and dust with some garlic powder. We usually serve them cold. They are AMAZING

I just LOVE to cook Sweet Potatoes on the grill!

Just scrub them up and pop them in the microwave for maybe 4-5 minutes just to give them a start. Then on to the grill to finish and crisp them up a bit. They cook much faster than a standard potato. When done, a little butter with salt and pepper and you're in for a treat. Many will also use a little brown sugar if you want it a bit sweeter but butter,salt/pepper works fine for me.

If you can find em, pani pans are great on the grill, olive oil brush, salt and pepper.

One farmer up at Mt. Clemens Farm Market had them for a couple years on Saturdays. Any other stores anyone knows that has them would be appreciated.

Pani pans??? What are these?

There is a small summer squash listed in the Burpee and other seed catalogs called Patti Pan Squash. Is this what you are talking about?
