I have a cool lake I fish which has several areas of 2-4' deep flats which run from the shore (the shore is heavy/thick weeds) to maybe maybe 15'-25' and drop off to deeper waters....maybe 15-25' deep.

I am not an artist, but tried to illustrate the contours.
I am guessing they are in the flats and in the beds.....right? I have had decent luck casting tubes into the weed edges.
Any bait / tactics/ suggestions for large mouth?

Sounds like tubes are a great choice. Also try senko's, crayfish-colored cranks: anything to elicit a protective response from bedding fish.
However, spawning may be about over, if so fish may be scattered, or orienting to cover/structure (catching fish in the weeds could be a clue that that is going on). Try adding in some search-type baits, such as spinnerbaits and faster-moving cranks (might be too early for a rattletrap, but I NEVER hit the water without one) that can cover more distance, both horizontally and vertically. Zero in your tactics in terms of depth, type of baits and type of cover once you hit a pattern that works for you.

I was also thinking senkos on the weed bed. In the morning try some top water. Then as it gets hotter i would try working the drop off with a crankbait or what ever soft plastics your comfortable with just make sure they have enough weight on them to get down there.

4" Yum Dingers or Nemesis stick worms on a 3/0 or 4/0 EWG Gamagatsu hook rigged texas style (with the hook tip skin hooked on top), no weight. (around here, some kind of green is usally best)
Can be fished over, through, around and along the week lines. You'll catch more fish on a slack line, than on a tight one. Watch for the line to move. Sometimes with a little tick, sometimes they just take off with it sideways.
Hook set is quick jerk.
Zoom fluke (white), same hook, same rigging. Work it like a fleeing minnow over the weeds. As it comes out over the weedline, or through holes in the weeds, let it "die" and flutter downward.
Like topwaters, don't set the hook until you feel the fishes weight. Then snap it hard to drive the hook through the plastic.

Spawning may be about over? I haven't even seen them on the beds yet where I fish. Am I missing something.

I'd go with the Senko
But I'd fish it wacky
I like Black, Green pumpkin W/blk flake or smoke w/ blk flake
Some times they hit it on the drop
And other times the take it as you pull it slowly thru the weeds
