Hi guys i was wanting to smoke a large peice of meat and was wondering what to do beef or pork keep in mind i'm fairly new to this. I have a propane smoker and know the basics but don't know what rubs or injectables to use. If someone could tell me a recipe and a few ideas that would be great thanks. PM me if thats better

I was gonna PM ya, but then I thought there may be others out there in the same boat, so what the hey! First of all, many rubs work well with either pork or beef, but I like to use different ones for beef or pork. The important thing to remember, what taste do you like?;)

If you want to do a large chunk of meat I would suggest a pork butt( bone in boston butt). They have alot of fat throughout the meat to keep it from drying out, and also adds alot of flavor. If you want to do beef. A chuck roast is almost the same cut as a pork butt, but from beef.heres one for pork


3/4 cup sugar
1/2 cup kosher salt
1/3 cup crushed black pepper
1/4 cup paprika
1 tbs each of the following: garlic powder,onion powder,chili powder,
celery salt,hichory salt, msg(optional)
1 tsp cummin
1 tsp sage
1/4 tsp cayenne


for beef

2 TBS. of each: ground black pepper,onion powder,and kosher salt
1 TBS, garlic powder
2 tsp paprika
2 tsp old bay seasoning

let us know how they work, and show us a pic if ya can. ;)

Thanks alot spanky that recipe sounds good. We are going to try it this weekend and will post the report. I'll try to get pictures also and try to post them. One more question does the pork need to be injected and if so with what. thanks again :)

No, it doesn't have to. Some folks do to enhance the flavor. I do sometimes,but most of the time, I dn't.

here's a simple inject:
2 cups apple juice
1/2 cup brown sugar
1 cup apple cider vinegar
1/3 cup worchestershire sauce
2 tbs. of your rub.


inject and rub the night before, wrap in saran wrap and refridgerate until you are ready to smoke it.:)

Thanks again for the recipe i will try some time soon and i like your idea of home made rather than store bought. We raise our own beef and pork and chickens. Will the rub recipe work on chicken or do i need to use something else. Thanks for giveing out these recipes spanky they will help me out alot.

Round is a shape.:rolleyes:


You will want a different rub for chicken, and a marinade. marinades for chicken make a huge difference in taste and texture.


Off to watch the game, spent most of the day getting the winter dirt and dust of the competition equipment. Tomorrow we be cookin agains a few others. If anyone is around the Lansing, Grand rapids area on saturday. Come and check us out. I have another post about it. Looks like t-shirt and shorts weather!:)
