View Full Version : Rabbit or Squirrel Casserole

This is one of our favorites.

Boil quartered critter with onions, celery, and carrots. This is the only time I ever boil wild game. Anyway, when the rabbit starts to float, it 's about 3/4 done. Strain the water. Take a casserole pan and and coat it with butter. De-bone the squirrel or rabbit and put in dish. Add the veggies you boiled. Put FRESH UN-COOKED brocoli spears over the whole deal. Pour a large can of cream of mushroom soup over the spears and bake in the oven at 350 for about an hour or till the brocoli is done. Take out and cover with about 1/2 in. of cheddar cheese. Pop it back in the oven for aboout 5 min. till the cheese is melted.

Sounds like an excellent dish to prepare when entertaining guests. Also, I think it would work with almost any kind of game meat.

You make me want to head right out and hunt up a couple bunnies.
Another variation on this recipe is to cover the whole thing with cheese whiz instead of cheddar.
I nearly forgot about this recipe.

That sounds good.
I usually Brown them in a pan after the Boiling and de-boneing.
Then put some rice and chicken gravy in the pan and let it cook.
UMMmmm Good.
Just watch out for the pellets:o

Sounds like an excellent recipe !

I just got back from Kroger and to my surprise they had cut-up bunnies in the freezer section. They were $2.49 a lb with most of them averaging around 2 lbs. I bought one to put in the freezer. I've never tried rabbit but would like to. I'm pretty sure that my wife hasn't either. I'm SURE that she'd be reluctant to eat it if she knew what it was. I think I'll cook it up while she's at work and have this casserole all ready when she gets home. I'll let her try it and wait until she's done before I say anything. ;)

I've never noticed rabbit at a grocery store before. Maybe it's been there but I just didn't notice it. I might try this tomorrow. If it's as good as it sounds I'll head back and pick up a couple more to have on hand.

One of the best things about this site is getting to find new hunting buddies.
Any time any of you guy's wan't to go out and shoot a few bunnies let me know.
I'll bring the dogs. I would love to run them in some new spots. Great training for them!!
And you guy's can keep the rabbits.
I shoot plenty to last me threw the year ;)

This just sounds TOO GOOD !

I defrosted the bunny this morning. I've got it boilin' right now.
I can't wait to try it. I'll post the results later on this evening.

We just finished dinner a little while ago. This casserole is AWESOME. It's my first time preparing/eating rabbit. It won't be my last ! :) I probably won't get into hunting them, but whenever I can find them for sale I'll pick up a few for the freezer.

This recipe is quick, easy to prepare, and DELICIOUS.

great recipe thunderhead.we just finished it and it was wonderful.we forgot to buy carrorts so we added corn with the brocoli.got any more good ones for rabbit?

The rabbit in the supermarkets are domestic rabbit and raised on farms or by individuals in their backyard hutches. I have been noticing a lot of frozen rabbit lately. It does seem to be getting more popular.

But, what I have been finding is not the Pel-Freeze package. Have not seen that in a couple of years. Now-a-days it is a frozen package wrapped in clear plastic wrap without a brand name.

If you do find the Pel-Freeze box check to see if they still have the recipe on the side. New recipes would appear every couple of months.
