beer batter is always good. Just instant pancake mix, beer to tecture, and some bay seasoning to taste. can't go wrong.

try chunking them up and boiling them in salt water for about 5 minutes and then dip them in melted butter, she says they taste just like crab legs. No fishy taste at all and the hint of salt makes them quite tasty.

i take a sheet of aluminum foil and lay the fish down season both sides with salt and course black pepper. slice up lemons and jalepenos and lay them on top of fish. put another sheet of aluminum foil over top and fold edges all the way around to make a sealed bag and bake at 350 for (well i really dont know how big your fish are) probably 40 minutes, slit the bag open on top and if the fish meat is flaky then its done. Fish is the easiest thing to tell if its cooked

Gramps taught me this one as it does not require the pike to be deboned. Filet the fish and remove the skin. Cut vertically with the Y-bones into approx 1" wide cuts. Deep fry in beer batter @ 425 F. It basically flash fries them and the bones seem to dissapear. When done we always dip them in a spicy BBQ sauce such as Mississipi BBQ sauce. Great little dippers. The only way ive had pike and its simple to do. Calls it Georgian Bay Shrimp.

This fall my buddy got a 34" pike and took it to his gramps to get smoked. I had never even heard of it smoked before. Sounds different but he says its great.

I just pickled some pike last week and am very pleased with it. Do a search on this site for "the best" pickled fish recipe - by talon. It is very easy and very good.
