My neighbor wanted a portion of a salmon smoked for a cream cheese dip

Normally I don't over-smoke fish, but for that application a firmer meat is the ticket.

I think it was one of those Costco Salmon

I just warmed up the smoker with it. Here's a loin that came out as flavorful as Plath's in Roger City.

Still haven't tried a cold-smoke yet. I'm missing a vital ingredient...LOL
