I have a goose breast recipe that when done correctly, you swear you were eating good prime beef. The key is the marinade. I marinade breast for 2 - 4 days first.
1/2 cup teriyaki or soy
1/2 cup port / sherry / maderia
1/2 cup olive oil
1 med. onion chopped
3 cloves garlic pressed
20 crushed juniper berries. key ingrediant do not skip
2 tsp ginger
1 tsp orange rind
salt & pepper
Breast out goose. (If it is one of those old tuff ones - do something else with it). Marinade 2- 4 days. Wrap Breasts in Bacon. Grill 7 - 9 minutes per side on medium high according to size of Breast. Do not over cook. All game should be on the rare side. (hot & fast seals in juices - not slow & long!).
Slice in small strips. Serve over wild rice with a nice Red Zinfindel. You might even get lucky that night????
