I have my nephew comming to town to spend thanksgiving with us at relatives. I decided to do our imediate family thanksgiving dinner tonight.
I brined my 12.6 lb bird last night, washed and dried it off this morning at 6 am, and into the fridge to rest till 11:30. This pic is the bird all seasoned, stuffed with onions, apples and apple sauce(loosely), tied up a little and rubbed and seasoned, ready to go into the pit.

here is a pic about 3 1/2 hrs into the smoke, and some fatties for the weekend in with her.
