Me and a friend want to make our own burger..he has the grinder but we need to know how much, what kind of fat to add in with it. Thanks for any info.

My butcher adds pork to the ground venison. I [I]think[I] he said 20%.

I add hamburger. 3 parts venison to 1 part burger. Tastes AWESOME. Used to put pork in it but this turns out MUCH better

3lbs vension to 1lb beef. Cooks up alot better and packs for burgers better.

I do 3 to 1 as well. People who don't paticuarly like venison are surprised. Oh, I just use cheap hamburger.

so i shouldnt just buy beef fat at a store to add to the venison? Its better to just buy regular hamburger?

Use 20 percent bacon for the cut and you will love it. Some grocery stores have irregular cut bacon in 10 lb. boxes for 12-14$ a box.

I don't mix mine with anything. Just have to put a bit of olive oil in the pan.

Grind it straight and plain then package and freeze. For some uses like spaghetti sauce or lasagna you might want to use the ground venison unadulterated.

For burgers you might then want to mix the straight venison with a bit of bacon or pork or regular hamburger. For other uses you can consider mixing with something.

Just grind the stright venison, and add the pork/hamburger before you cook it. I have found fat doesn't keep frozen as well (as long of a time) as if it where stright venison.

I get fresh beef fat trimmed from steaks from a local butcher.

I grind at about a 85% venison and 15 % fat and have had great results.

We mix with haburger 1 to 4, use pork if your making sausage. Pork holds seasoning well but has a shorter freezer life than beef.
