Smokin in the cold!

Got a few folks who need some pork, so I agreed, man its tough on the ole boy and his woodburner!

Butts and babybacks about 3 hrs into their day!

A little bit.

I been knockin out some cold smokes lately. Cheeses mostly at the moment, and a cream cheese smoked salmon ball experiment I'm workin on. Waiting a week for the final taste on that one.

I'm looking forward to some warmer smoke & Q this weekend though. Have 6 half loins of Canadian Bacon to smoke as well as some venison for a buddy.

The only problems I have smokin in the winter is gettin out in the cold to load charcoal...:(

I'm really thinkin bout movin her into the garage and venting out the window.

This pic shows from top down a chuck roll, Two huge pork shoulders, and a couple briskets on the bottom racks.
In all around 65lbs. of tastey BBQ.

The ribs are for " Kingtroller" he is serving them to his company for part of his thanksgiving meal. I hope they like them! Come and get em Dave!;)

Yeah, as you can see I missed my beauty sleep! About 10 yrs ago.Probably shoulda slipped the spawn bibs on for the picture!:D
