I love BBQ'ing, but I don't think I could do the pit-style. With 4 huntin' dogs, I am sure one of them would get the wise idea to do diggin' it up!

Good stuff here in the BBQ section. Don't look at Spanky's pictures unless you are well fed.

Yah, would like details of Texas Pit - do you have a link?

Thanks,

Steve

After reading the article, I think I will stick to my smoker. Digging holes is labor intensive, paper bags and wet newspapers kinda creeped me out.

Maybe I am just not grasping the whole concept? Take some pics and repot back if you give it a shot.

Actually this is a great wat to do seafood, not sure about other meats though. We used to do this all the time when I was stationed in NC. We would dig a pit on the beach and do up fresh seafood. Well, I would dig, someone else would do the rest and then I would eat, but it always turned out great.

thanks for asking ! smokers are nice and i have one too ! but pit bq is different ! you are cooking at low heat-indirectmethod and smoke for 15-25 hours ! underground and done right smoke is not escaping ! digging a hole only has to be done once ! paper bags are free and i always have newspapers ! and i have been doing this for a couple of years ! my land in ludington is where my pit is and i only q once a month but am able to put brisket-pork shoulder- chuck roast all at once ! then freeze left overs- if you like barb-q sandwitches there is none better ! does not exist ! if you have never had authentic texas style pit barbeque then you would not know why it is worth it ! most michiganders do not ! unless transported from texas ! reminds me of thirty years ago in arkansas everything was spicy ! and catfish is huge -restaurants all named after a catfish and many gas stations had live tanks with fresh catfish to purchase !! when i moved back to michigan nothing was spicy ! no one knew how to cook catfish or even liked it let alone fish for them ! just thought i would share ! thanks
