Hey guys just wondering if anyone had any personal favorites for a recipe for cooking squirrel. I just went last weekend and have some to cook. Thanks.

I like to brown them in a skillet and then put them in a slow cooker with a can of cream of mushroom and a can of cream of chicken soup. Served over brown rice.

4 squirrels cleaned
1 chicken
2 c bell pepper; chopped
2 c celery; chopped
1 qt stewed tomatoes
1 cn (small) tomato sauce
2 c canned okra or fresh iffin you can find it.
3 tb creole gumbo file; (or to taste)
3/4 c dark roux
Pressure cook and debone squirrels and chicken. Save the broth.
To boiling broth, add bell pepper, celery, onion, tomatoes and tomato sauce.
Make roux using oil and flour in equal parts in a heavy cast iron skillet brown your roux until it becomes the color of a penny. Don't over cook the roux or you'll ruin the whole mess.
As soon as the roux comes to color add to the above mixture, stirring until well blended. Cook until vegetables are tender. Add meat and okra. Season to taste. You may also want to add hot sauce to taste. Simmer for 15 minutes. Just before serving or when serving, add file, (to taste). Serve over rice. Serves 15 to 20.

We do the same thing that two hats does only we leave out the chicken soup and we add mushrooms, onions, and spices that the crew in camp enjoys. Sometimes we pressure cook them which debones them but we do it either way, and we use other small game in the same pot. There are never any left overs. The crock pot will debone also and the shot falls to the bottom. The pressure cooker tenderizes also. Have them good eats!

Par boil for 20 minutes in bullion.
Coat with salt, pepper and paprika. A light dusting of flour
Pan fry to brown, add onion, green pepper and a can of stewed tomatos once the onions turn transparent.
Simmer down for an hour and place the squirrel on a bed of rice or egg noodles
