Had another day off today,:( been too many of them lately(with out pay as usual) so I decided to brush up on my ribs. Got a lil rib comp in a couple weeks over by Flint, and baby backs were on sale for 2.99 a lb, so what the heck. Did a couple peperoni, cheese and italian sausage fatties, and a couple pans of wicked baked beans to while I was at it.

a little over 5 hrs at 230-240 degrees, oak, cherry and crabbapple was the woods of choice. They were pretty tasty, and are almost gone!
Just before the dinner bell was rung!

they were pretty good, still workin on that perfect rub for comps. Yesterdays rub was great for family and friends, but the judges want it alot different than those of us who are actually making a meal out of these things.
Tenderness and apperance was about perfect.;)

Thanks Ryan, and yes I did foil after 2.5 hrs, for about 1.5 hrs, then 45 minutes out of the foil with a glaze applied twice! You gonna come up to Flushing and throw yer hat in the ring?;)

Well, the rib contest was a big time fun event. I had a blast with all the compeditors, and all the folks who came to the festival as well. I didn't place in the top 3, so I don't know where I ended up, or really care. It was a good weekend with great friends, and lotsa memmories. Today, I am gonna smoke some ribs and fatties just to see if I can try a couple new rubs and mops.
2 1/2 hrs into the smoke!

Fatties are about to come off, all three are italian sausage, 1 with mushrooms, and pepperoni, and pepperjack cheese, 1 with ham, mexican blend cheese, and one with pepperoni,pepperjack, and cheddar.
I'll post the sliced pics after they cool, along with finished rib pics!!!;)

Are those fatties naked??:confused: I had planned a few for the weekend along with a 6.5 # picnic cut. My smoker sure did some smoking on Friday in a bad bad way:yikes: About 3' flames and goodbye fatties. Ended up talking my dad into getting me a smoker for a housewarming gift for me AND my fiancee:evilsmile. Ended up making them some fatties and did my pork yesterday, pics to come. Found out the temp gauge on smoker is about 75 %%$%%$$&_ degrees off. Done a little soon but turned out pretty good. Picked up a Smoke Hollow #6 electric cuz im lazy:lol:

Thanks Ralf, had the bibs on today, till it warmed up to 75 degrees. Can't believe the musquitoes out today in bright sunlight. Went 3 for 3 on Crome, on spawn, fairly close to "gilligans " island. Remember?
I'll never trade them in, but a man does have to eat, and decent BBQ makes my tummy happy!;)

Hehehe, funny you should ask shoeman, I fished with him yesterday. He asked me if I ever see ya on here or talk with ya. He hasn't been on this site in a few years, got sick of the crap:(, I was walkin it right next to hime yesterday. Often we walk together, and he aways asks me how I can beat him to the bottom of the roun every time!;) I like to use that midlle part of the spool that most guys never see!:D
If ya head over, let me know, I would probably drop what I am doing to meet up with ya or have ya on board, or jump aboard, I'll bring the munchies!:D.

No smokin since mondays ribs, but sunday looks like a light smoke while I am getting the Shop cleaned up some.
