This is an absolute delicious recipe. I used to make it alot back home with Doves (We had turtle doves back home in sept/oct)

5-8 pigeons/doves (cleaned, with skin on)
Stuffing:
2 cups of rice (long grain)
1/4 lb ground beef
2 oz of pine nuts
1 tbspn cinamon
2 tspn salt
1/4 tspn Thyme
1/2 small onion finely chopped.
1 tblspn butter or margorine
prepare rice and nuts:
in boiling pan, prepare rice (as you would make normal rice)
in separate Skillete add 1tblspn butter, melt it and put the pines in it on med heat. till golden brown. don't make them dark brown.
when done, take nuts put them in a place on side.
in skillete, brown the ground beef with a little olive oil while you add the salt and pepper and cook on med heat till almost done (little brown)
When rice gets almost done (not quite done), drain excess water. mix meat and nuts with rice and mix them well. taste the rice and add little salt, pepper and put cinamon in them till you like the taste.
take the rice and stuff the pigoens.
Rub pigeons with butter and place them in pyrex pan (baking pan).
season the pigeons with salt, pepper, paprika (butter gives it a good taste and help seasoning stick).
put in oven and bake on 350. about 40 min or till Pigeons get a little golden color and get done.
