I am new at this and need some help. I am making goose jerky in the oven (200 degrees for around 4 hours). However, my jerky comes out a little to chewy for more liking. Do I need to cook it a little longer? I am worried about over cooking it.
Any advice would be helpful.

You are probably cooking it too long, try oven at 250 for less time. Al

The texture and drying time can also be impacted by the thickness of the meat. Might want to try a thinner cut.
