I mentioned a couple of weeks ago that I'd post the list of stuff that I do to the boat for winterizing. I'm not a mechanic and I'm not posting this as the gospel. This is merely what I do to my boat every fall. (This list isn't necessarily in the exact order of when it's done.) Mainly, all of these items were taken from recommendations in various boating magazines.

ć Remove all items from boat. (life jackets, electronics, tackle, etc.)
ć Pour in Fuel treatment and fill up gas tank.
ć Vacuum carpet.
ć Wash entire boat.
ć Clean all vinyl with Meguiars.
ć Touch-up paint on the outdrive.
ć Wax boat. (Including the outdrive metal surfaces inside boat.)
ć Run engine for 15 minutes.
ć Drain rear end oil.
ć Change engine oil & filter
ć Change fuel filter/drier.
ć Re-fill outdrive oil.
ć Start engine for a couple of minutes and spray fogging oil into the carb slow enough for the motor to run rough. When the can is over half empty, spray in fast enough to stall the engine.
ć Remove all spark plugs.
ć Spray fogging oil directly into each cylinder.
ć Rotate engine a few times to circulate the fogging oil.
ć Re-install the spark plugs, spraying each of them with more fogging oil or WD-40.
ć Re-check all fluid levels. (engine oil, outdrive, power steering, trim)
ć Open up all drain plugs till the engine is fully drained.
ć Close them up and fill the motor with antifreeze. (I go through the thermostat housing.)
ć Grease all steering and outdrive fittings.
ć Remove prop and grease the splines.
ć Coat all sliding mechanisms with WD-40. (steering shaft, throttle linkage)
ć Clean up engine and spray lightly with WD-40.
ć Remove battery and clean & coat the terminals.
ć Clean bilge area and dry thouroughly.
ć Spray Meguiars on rubber boots on the outdrive.
ć Throw dryer sheets into storage compartments. (Supposed to deter mice. Plus, it kinda helps defeat the fuel smell.)
ć Cover boat, outdrive and set trailer on blocks.

Great list Tim, I have to do one of my boats tonight(First time with an I/O). Between this and the manual(and a buddy who has had one for years), should be all set. I'll post if theres anything additional I find.
