Last week, the wife purchase some of bone-in split chicken breast that go on sale from time-to-time. You know, the really big ones. I don't know about you but chicken breast can be very bland unless dolled up or seasoned in some manner.

It was somewhat late in the afternoon and I did not have tome to marinate so, this is what I did. And boy, it came out really really good. I simply pasted them thoroughly with olive oil. Then, I put on a generous amounts of Billy Bones "Competition" BBQ Rub. I do mean "generous" so that it was just like shake and bake effect. Put on a medioum grill and cooked until a 170F Internal. Put on an exceptional "bark"

I'm not a shill for any company of product so don't go there. This was a great recipe to what oftentimes is, a bland meat: chicken breast. My entire family said it was perhaps the best chicken I ever made. And, it was merely a spontaneous thing driven mostly by time.
