Has anyone tried there own. I love the ones that Emerald puts out but I don't like the price!!

Any recommendations on the seasoning to use? I think I am going to roll with salt, garlic powder, paprika, and a little onion powder too.

Try this one. A bit pricy but, it is to die for. No reason you can't use almonds instead of pecans.

Parmesan Pecans


This fun and tasty appetizers are highlighted by two of our products - Raspberry Honey Mustard and Hot Raspberry Thunder Sauce.

Ingredients



1/4 cup Robert Rothschild Farm Raspberry Honey Mustard
3 Tbsp. Butter, melted
1/2 tsp. Salt
2 cups Pecans, halved
3/4 cup Parmesan, grated
Vegetable cooking spray
A dash of Robert Rothschild Farm Hot Raspberry Thunder Sauce





Directions

Preheat oven to 250 degrees F. Line rimmed baking sheet with foil and spray with vegetable spray.
Place the Raspberry Honey Mustard in bowl and whisk in butter. Add the salt and Hot Raspberry Thunder Sauce and mix to blend well. Add the pecans to the mixture and mix to coat well.
Spread Parmesan cheese on a plate and toss a few pecans at a time in the cheese, being sure to coat well on all sides.
Transfer pecans to baking sheet. Bake for 15 minutes. Stir and bake 12 minutes more until just golden. Remove and cool to room temperature. Store in air-tight container for up to 3 weeks.

I was very happy with the end result.

Sorry Riva, I didn't see the recipe until after the smoke was done.

I used:

1 Tbs of sea salt
1 Tbs of paprika
1 tsp of garlic
1 tsp of onion powder
Just enough olive oil to coat 2 lbs of almonds

The spices were put into a coffee grinder before being applied to the almonds.

Smoked at 200 deg for just over an hour. I highly recommend them!
