I started my first wine without a kit. A friend gave enough maple syrup to make a mead. Started with a SP 1.91 and used a champaign yeast with energizer. I will keep you posted how it turns out. The recipe I had said it will take a year to smooth out. Don't know if I can wait that long before a test.:evil:

Yep.I do enjoy a good mead.A Maple mead sounds very good. Currently I have been drinking some spiced mead that I brewed.I also have 5 gal. ageing that is flavored with orange zest. Next I will be brewing up a straight sweet mead. Keep us updated.

How much maple syrup did you add?
Was it home made syrup?

I will post the recipe next week. i am at work and the recipe is at home. Yes it is home made syrup. A friend has a sugar shack and they made 49 gallons this year. He was kind enough to give me 2 gallons for this project. I used 1 3/4 for the mix. The recipe called for 1 1/2 but SG was not high enough.

I bottled the mead last night. It has a wonderful color to it but is still like rocket fuel. I believe it will be wonderful in about 9 months. Some day I will have to learn to post pics because the brew sure looks sweet.

Opened a bottle last weekend and it has smoothed out nicely. Not a lot of flavor but gives a nice bzzzz. Next batch I might back sweeten with syrup. I see some of you make a spiced mead. What kind and how much spice do you use?
