Decided to experiment with a goose recipe. No real specifics with the measurements since I decided to "wing" it and see how it turned out. It turned out wonderful!!!
Start out with cubing 1 1/2 to 2 pounds of goose breast. Boil for about 15 minutes then drain. Replace with fresh water. I added water enough till it looked like a good balance of meat in the soup. I then added:
1 medium onion
stew seasoning or bouillon
1 Stalk of celery
1 can of diced tomatoes, I used Italian style
Cover and simmer until meat is getting tender which takes a couple of hours, then I added potatoes and cabbage(didn't have any carrots or they would have went in there too!) We love pepper so I added lots.
It was fantastic and a big hit!(This coming from someone who gags at the smell of raw goose) Tasted like roast beef!
Next time, I'm going to add some turnips.
