It's getting of be that time of year when the slamon begin to run and I have some fish from last year still in the freezer to smoke. When I had my fish cleaned in Oscoda last year a guy told me a recipe, but I can't remember the portions or the exact ingrediants. If anyone has specifics, I would appreciate it. I know
it had blackbeery brandy, brown sugar and some type of salt. Please let me know if this sounds familar. Also I have been smoking with mesquite is there another wood you would recommend for salmon? Thanks fellas.

Try some Hickory.....i used the Brown Sugar/Honey recipe in one of the other post's yesterday...turned out really well....

Here is the recipe for the best smoked salmon I have ever had.

1 Gallon Apple Juice
1 Cup Brown Sugar
1/2 Cup Salt

Soak fish overnight.

I have never really liked salmon that was very salty. This is a great recipe for someone who enjoys a sweeter tasting Salmon.

Finnaly I found it!!!! Im about to try your recipe on whitebass and last years bluegills and crappies for deer camp... Here goes nothing!
