View Full Version : Brinkmann Charcoal Smoker

I have a question about the above mentioned Smoker.......I've never smoked before...and have no instructions for this smoker....There are 2 grates inside.....Do you put one over the Charcoal and put the woodchips on that? or do you put the wood chips directly on the coals?......and how much water do you put in the water bowl?...Sorry so many questions....but i have some King i want to try the Honey/Brown suger recipe with

Wood chips go right on the coals. Also, fill the water pan anywhere from 1/2 to 3/4 full, depending on how long or how much you're smoking.

I have an electric Brinkman and this is what I do....good luck.

Just an FYI. I use a Masterbuilt charcoal smoker (sound like about the same set up as you have), and used no water pan with that Honey/Brown Sugar recipe. Turned out awesome. Still moist, tons of flavor. Used hickory chips, soaked in water, and put 'em right over the coals.

Ok....having a problem with the wood chunks....How long are they supposed to last?.....This thing is frustrating me...... :confused: :confused: :confused: :confused:

It depends on how large they are. I recomend keeping an eye on them and putting more in if needed.

Are you soaking them in water?

I put a bunch in a large bowl of water about 1/2 hour before I put them on the coals. As I add them to the coals throughout the process, I keep adding more to the bowl of water. Helps them not burn up as quickly, and you get more smoke out of the chips this way. I use hickory chips, mostly bark if possible, but I would imagine if you are using the large chunks you would have to soak them inthe water quite a bit longer.

Also, I just use a slotted spoon to remove the chips from the water to let it drain before placing on the coals. Hope this helps.

Damp sawdust will produce a lot more smoke than wood chips. To keep it from igniting, I added one firebrick on each side of the caracoal, then put a piece of metal screen on top. That allows about an inch of space between the coals and the sawdust - keeps the coals burning better and also makes the sawdust last longer. When placing the damp sawdust on the screen, I pack it as tightly as I can to remove air. Two cups of packed damp sawdust will usuall smolder for a couple of hours when placed over 12 to18 hot briquettes. Usually, I have to add more charcoal about every hour.
