What are your favorite / easiest ways to cook / eat morels?? I'm pretty new to this but have been finding a few while working the property this spring... Any ideas would be appreciated.

One more thing- How do you guys process the morels once you pick them prior to cooking? Thanks...

I love to just saute in some real butter. If you get some jumbos stuff with canned crab meat and cream cheese and roll in flour and deep fry for a minute or so. Those are sooooooo good. If you pick more than you planning on eating take a needle and thread and string them like popcorn and hang for a day or so. I put an fan on low to let air circulate, just make sure they don't touch. To use them just soak in water overnight and they are ready!

Wash them over really good in cold water. Morels tend to be gritty. You never really get all the sand out of them, but just wash over cold water. If you plan on eating them in a day or so place them in a bowl and cover with a moist paper towl. When the towl dries out get it wet again. I wouldn't recomend keeping them in the fridge for more than a few days.

Hi HW

I like to cut them up and simply saute them in onions and a dash of garlic
and either put on top of a nice cheeseburger or steak or an add to an omelette.

Yesterday I sauted up some fresh ones and had them with a fresh trout I caught and some asparagus I had just picked.mmmmmm

I have friends that will deep fry them in cracker crumbs as you would fish and sit down and eat a whole plate of them.
I can eat a couple like that and they are great, but not that many! lol

This is good with the whites and larger blacks, don't use too much butter or crowd the dish or they won't cook as well.

Oven to 500 degrees
Lightly greased glass baking dish
Rinse cleaned and halved morels in milk and coat with bread crumbs
Lay in dish cut side down
Pour a little melted butter over each one
Bake about 10-15 minutes, almost to smoking
