Great, the rain we got must have helped the morels along. What is the larger shroom?

The large one is the "Dryad's Saddle" ...Polyporus squamosus......
also known as Pheasant's-back..
The soft and tender edges (about 1") of the caps can be pickled, sauteed or fried.

Are those Polyporus Squamosus any good? What do they taste like. I was just walking out back and found quite a few of them. Before I pick them I thought I should do a little research.

They are "OK" maybe pickled would be good, I haven't tried that.

I've fried in flour and butter, wasn't all that great.

I've par-boiled and fried in bacon grease with some bacon, was "OK"

Sauteed in Olive Oil, was "ok"

Now my step-dad really likes them though. I'll fill up on Morels and Oysters instead. ;)

It's just a matter ones individual taste . I know one gentleman that would rather eat giant Puffball (Calvatia gigantea) then any other wild mushroom. I have eaten both the drysdd's saddle and the puffball and would honestly say that my socks may have a better flovor then those two. Just mo

I agree, Leonard! Not the best tasting shrooms, but to each their own! :)
